Gounday Satakoray
Ingredients:
½ cup oil
1 lb (½ kilo) meat
4 cups rice
1 tsp pepper corns or ½ tsp ground pepper
1 med onion
other spices (optional)*
2 bouillon cubes (optional, but definitely use them if you
are trying a meatless version)
salt as desired
*While
typically not used here you can add spices like rosemary,
marjoram, basil, etc., whatever goes good with meats that
you like. It will give a little more flavour to an
otherwise bland dish.
Heat
oil in a large pot. Add cleaned chunked meat
While this is searing, grind pepper corns and chop onion in
chunks or strips add to mixture with salt. Let this cook
until meat is tender, apx. 1 hour.
While meat is cooking clean rice. If necessary pick out any
small stones or grains that are still in their hull. If
necessary winnow. Rinse rice pouring off dirty water.
When meat is cooked add water about 1/2 litres per cup of
rice and bring to a boil. Add clean rice to boiling water.
Add bouillon cubes and salt to taste.
Bring back to a boil and let simmer stirring occasionally
until all the water is gone.
