Maffe Tigidigi
Ingrediants:
½ cup
Tigidigi (peanut butter, it is better to use plain ground
roast peanuts with no sugar or oil added)
2 Tbs Tomato paste
1 small chunk of dried fish (1 inch square)
2 bouillon cubes (optional)
some salt, black pepper, dried peppers, cumin, and anise,
as desired
1 Tbs okra powder
or
several fresh okra chopped in thin disks
Vegetables as desired; sweet
potato, squash, cabbage, carrot, eggplant are good choices
Mix peanut butter with water until dissolved; apx 1 litre
in a large sauce pan.
Add some salt and tomato paste to pot and place on heat.
Clean and cut meat into chunks add to sauce.
Powder spices and add to sauce.
chop fresh okra (if using) into small slices and add to
sauce.
Let cook stirring occasionally to keep from sticking. Add
more water so level stays. When all the oil has separated
and is floating on top the it is time to add the
vegetables.
Rinse vegetables, peal if necessary, chop into chunks, add
to pot. If necessary add water until they are mostly
covered. Add bouillon cubes.
let simmer until vegetables are done. test taste sauce add
salt if needed. Add okra powder (if using) stirring
constantly to avoid clumping. When sauce thickens from okra
powder remove from heat.
Serve over steamed rice, or experiment with other grains.
